I'm certainly going to try this recipe PAC - I've tried quick pickling some other non-cucumber stuff, and have consistently enjoyed the results. Any ideas on substitution for the habanero vinegar? Saraveza on Killingsworth usually has an interesting selection of non-traditional house-pickled veggies/fruit.
You can just cut out the habanero vinegar and increase the volume of the white wine vinegar by 1/4 cup. To get the same spicy kick, you could probably add a tablespoon or two of your favorite habanero hot sauce to the brine before boiling, or try a tablespoon or two of red pepper flakes.
