"I'm celiac" always sounds like you're a space alien or something, but you have a legitimate gripe. Don't give attitude about the dietary choices of customers, bar and restaurant employees!

GF versions of traditionally glutenous items are necessarily made of different ingredients, thus have different textures and flavors. People who have no trouble with gluten may simply prefer the GF version.

My friend is gluten-intolerant and his wife isn't. She doesn't eat gluten. Is she a pretentious hipster? Perhaps, but not for that reason. She's a supportive spouse.

There are many reasons people might seek out, opt for, settle for GF items on a menu. It's not the servers' job to wonder about them. If you must, do so to yourself* and/or on your own time.

The term is becoming vogue because more people are being diagnosed. After suffering my whole life without knowing what it was I am thrilled to be thought of as picky, or a pretentious hipster... just don't give me gluten in my food! Celiac disease killed my Dad's entire family by 60 - mostly intestinal cancer - so we are thankful diagnosis is more common these days. He found it at 57.

Note to Jake, check out Deschutes Brewery and try the draft GF beer and then spout out off like the pompous fool...
Yes, most other attempts at GF beer are passable at best...however I Deschutes version is legit! Also, for any GF folks wanting another suggestion, try Estrella Daura in red bottle at local grocery...very good:)

I enjoyed this a lot more before I decoded GF as gluten-free. I thought it might be "girlfriend", as in "might prefer the girlfriend version". That sounded fun!

There was a pretty interesting (and longish) article in NYTimes Magazine a while back about GF/Celiac. http://www.nytimes.com/2011/11/27/magazine/Should-We-All-Go-Gluten-Free.html?ref=magazine Turns out there are a lot more diagnoses lately because until around 2001 doctors wouldn't even admit that Celiac existed on this continent.

That said, I like beer, bread and other things with gluten, and I'm thankful I don't have to worry about it.
