Spend Less to Get More at Bar Lolo

As a person that frequents Bar Lolo, and has done so since the new owners took over, I must disagree with a couple of descriptions you wrote in this article. I have been in this industry for over ten years and have been critiqued quite often about my food. Any person that has spent time in the service industry knows this well. That being said, the descriptions of your experience at Bar Lolo were quite hard to follow, but I think you got your point across the best you could. I shall explain my objections with your "culinary" observations so that others may be able to endure the great food and drink, spectacular service, and authenticity of this brilliant Spanish tapas bar. First, the romaine and manchego salad. Once romaine is cut, especially a chiffonade style salad, its near impossible to not have moisture released. Secondly, and most likely my biggest issue with your review, are the albondigas. This is a menu item I order every time I visit Bar Lolo. I find the sauce to be smooth, comfortable, tangy, and a perfect addition to the meatballs. On top of that, the meatballs themselves are cooked quite well. They have a nice density, they are spiced accordingly within the standards of Spanish cuisine, so the flavor is extravagant. Lastly, isn't so much about the food. It's about the ambiance. The owners and servers create a superb atmosphere that caters to all. I truly hope that, at some point, you may see Bar Lolo in the light that many others do. Thank you for your time.
