The Sugar Cube: Destination Bakery on Alberta

Sugar Cube is indeed excellent, but I'm worried that like Dovetail before it, the space is too small and the prices too high for this to pencil out. For example, two coffees, two pastries and a tip put you dangerously close to $20. How many people will regularly shell out for that?

Also, Sugar Cube (like Dovetail) opens at 8. It isn't open Monday or Tuesday. Extracto Killingsworth and Prescott open at 6. Random Order opens at 6:30. Petite Provence opens at 7. By opening at 8, Sugar Cube cedes nearly all of the Alberta-area coffee-and-muffin-to-go business to its competitors, all of whom sell good pastries/breakfast food, good coffee, and are open every day to boot.

Obviously, Jensen knowns her business and has way better information than I do, and can hopefully make some good catering money from the large back kitchen, but I'm worried. Sugar Cube serves great food (like Dovetail did) and I'd like to see it stick around.

@CC: This is well trod ground and I agree. But also, I wish these places would get off of Alberta and get downtown and into a two block radius of my office. But I'm also greedy and self-centered.

If I remember correctly, the Sugar Cube started off as a cart at the 10th&Alder pod, about where the Frying Scotsman or Gaufre Gourmet are now. I miss it being down there, doubly so since St. Cupcake just left as well.
