Now with a second location on NW Thurman, Olympic Provisions has expanded their meat-centric operation to two European-styled restaurants/delis that provide delicious bites from their USDA certified meat-curing facility (Oregon’s very first). The kitchens are guided by the capable hands of Alex Yoder, whose food focuses on clean, bold flavors of the Pacific Northwest and beyond. While Salumist Elias Cairo crafts American Charcuterie using local, high-quality ingredients for wholesale to grocery stores, restaurants and wine bars around the region. Many products, including some that are available nowhere else, can be sampled at the restaurant and purchased directly from the deli case.
Olympic Provisions Part II builds on its older brother's reputation.
