I have a almost 7 year old (entering 1st grade) and an almost 3 year old. They both love parsnips. In fact as a baby the younger one would eat anything mixed with parsnips. I put them into a lot of soups, roast them, mash them etc. They really tend to be sweet which appeals to a lot of kids.

Earlier this year, OLLIE Youth Media worked with a group of students from Buckman SUN to answer this question: If you could change one thing about school lunches, what would it be?
