KOifusion, Confusion! I swear, we planned to do a drive by this week (of the taco kind) at the parking lot near the Mercury's office. And trust me, we are still planning on it soon. Of course you Patrick, and you Alison will be the first to know.

Have to confess, the KOifusion taco love here in PDX has been a bit overwhelming...I mean, we aren't really even fully open yet, and yes, Mom is cooking the meat every day and when she's out, we're out. We are also reliant on our resident taco angel Rosie (she's the one cooking in the truck and making the tortillas). Rosie is our patron saint for sure; she's been working in taco trucks for 40 years! The woman knows her tacos and how to run a kitchen, that's for sure.

So this is what we are doing - KOifusion is going to have to continue to be a bit stealth for a couple more weeks until we can get everything fully functional and up and running smoothly. We will be hiring more people, getting a menu posted, and adding more specials as we can.

KOifusion will be at PSU (SW 6th and College) on Mondays, Wednesdays and Fridays from 12:30 til 2:00 PM. (except this coming Monday - it's Memorial Day). We will also be at Last Thurs on Alberta Street next week...somewhere on Alberta Street between NE 15th and 33rd, probably. Other than that, check our website www.koifusionpdx.com or our twitter feed @KOifusionpdx for our daily schedule, exact locations, and specials.

We are gonna have to ease into things like KFC (Korean Fried Chicken). But give us time.

Thanks again for going on the hunt for us. We're hard to find right now, but hopefully we were worth it.

Believe me, I'd love to tell you, but it would not be fair. Suffice it to say, I would not recommend people track them down if I didn't think there was something of interest going on at Koi Fusion.
