Canopy, the 10-story, 153-room boutique hotel by Hilton, has opened at 425 NW 9th in the Pearl, and with it comes an 80-seat dining room full of floor-to-ceiling retractable windows facing Northwest Glisan.

Canopy’s kitchen is run by Sara Woods, who put in time at Lincoln and Ray before taking the reins here.

Her lunch menu will mainly comprise dishes like sandwiches (bánh mìs, smoked salmon on rye), Caesar salads, cucumber-avocado soup, ratatouille, and a trio of pizzas baked in an oven that can reach temperatures of up to 800 degrees, while the dinner menu will showcase heartier fare like burrata, white bean tartines, short ribs, pork chops, baked orecchiette with mushroom ragu, and prosciutto pizzas, with s’mores tarts and yogurt panna cottas for desert.

The breakfast menu is decidedly more chill, with hotel staff offering guests gratis small plates of things like fresh fruit, quiches, frittatas, smoked salmon, Nuvrei pastries, Pop Bagel bagels, and Nossa Familia-roasted coffee drinks.

Hard drinks include a handful of signature cocktails and spiked tea drinks (rum, oolong, gruener veltliner, and chareau aloe liqueur) made from lots of local spirits, and Oregon beers, wines, and cider.

The space is also designed to function as a second home office for people in a pinch, with a quiet room right off the dining area with personal work booths, as well as a subterranean winter garden area where diners can play a game of foosball on a very custom steampunky table while they wait for their food to be delivered to a long communal table.

Canopy is open for lunch and dinner, daily. Breakfast is available from 6 to 9:30 am on weekdays and from 7 to 10 am on weekends.
