ABOUT THESE WINGS: Confit, smoked, and fried with a sweet, smoky, and salty sauce.
WHAT THEY SAY: "Like all of our wings at Dot's, we use Draper Valley Farms all-natural chicken wings. And like all of our wings at Dots, we brine them overnight in a brown sugar and saltwater mix with a little spice blend for flavor. Then we slowly confit them in bacon fat until they are tender enough to almost fall of the bone. After that, we smoke our wings with our hickory, cherry, oak, and maple wood blend. And just before we serve them to you, we flash fry them until they’re crispy and delicious. After that, they get tossed in bakers honey, and seasoned with citrus salt and everything bagel seasoning. It’s a process. And quite frankly, a major pain in the ass. But it’s worth it. 'Cause these are the best fucking wings in the city, by far."
