ABOUT THESE WINGS: Brined for three days, we then put four hours of smoke on them. Next they go into the fryer until golden and crispy. Finally we toss them in our filbert white BBQ sauce. Served with a blackberry coulis for dipping and carrot and celery sticks for munching.
WHAT THEY SAY: "As a southern chef, white BBQ sauce has a special place in my heart. Now that I've been in the PNW for eight years, I have fallen in love with the flavors of my new region. Two of my favorites are blackberries and filberts. Thus, the 'Civil War' wing with blackberry coulis was born. To stay true to history, we will sprinkle toasted filberts on the wings after we sauce them, so the north ingredients stay on top of the southern BBQ sauce."
