Harold McGee's On Food and Cooking took a scientific approach to cooking, explaining in detail why ingredients behave the way they do under different conditions. His new volume, Keys to Good Cooking, takes a more utilitarian tact, suggesting practical applications of the ideas explored in On Food. McGee visits the International Culinary School at the Art Institute of Portland this evening to talk about scientific solutions to common cooking problems.
