Brunch providers -I'm looking at you brunch restaurants and grocery stores and food trucks-, for the love of all that is good and pure, cut your breakfast potatoes smaller! We all know your prep people cut them as quickly as possible which translates to huge pueces so you can feed all the brunch-loving, line-waiting, millennial hipsters and turn over your tables again. Unclench your wallet a little bit and pay your prep cooks to cut the damn potatoes smaller EVEN IF IT TAKES LONGER! I'll be first in line when someone learns how to make breakfast potatoes that are cooked the whole way through and don't taste like the dirt they were grown in. As a city, we must spend millions on brunch every year. Get it together!
