A year ago, PBJ’s Grilled's Keena Tallman closed down all four of her PBJ’s Grilled food carts and decided to take a year off. Now she’s ready to get back in the sandwich-making game by turning her food cart concept into a full-on brick-and-mortar in a 1,500-square-foot Pearl District space once used as a banquet room for the restaurant, Paragon.

When it opens at 611 NW 13th, PBJ’s Grilled will have an open kitchen, roll-up garage doors, inside seating for 40, and outdoor seating for another 15.

Tallman says the new shop will rely on the classic sandwiches that made her “meats, nuts, fruits, and cheeses” food carts such a smash with locals.

Expect flavor combos like the “spicy Thai” (crispy coconut shrimp, peanut butter, sriracha, curry, basil, and orange marmalade), the “smoking goat” (slow-cooked, almond butter, bacon, goat cheese, and apricot jam), and the “PBJ’s burger” (white cheddar cheese, apple sage slaw, sage aioli, and smoked salt wasabi peanut butter), which can be paired with rosemary onion rings, homemade potato chips, and side salads.

Even more, Tallman says she and her team are building out a bar that’ll feature wine, taps for six beers, and cocktails.

Tallman says she’s not exactly sure when PBJ’s Grilled will open (construction hasn’t even begun yet), but she says she’s doing everything she can with the hope of hitting a June 1 target date.

And if you’re one of those east-siders who are bummed out that she’s chosen the Pearl District over a space closer to her old 12th and Hawthorne spot, don’t be: Tallman says she’s planning on opening three more locations in the next three years.
