The 4th annual Portland Sketch Comedy Festival

In November of last year, the Mercury reported that Hey Love, a new '60s- and '70s-style fern bar-inspired cocktail joint from Emily Mistell (Rum Club), Sophie Thomson (Bar Bar), and Nicholas Musso and Aaron Hall (both of Dig A Pony), was slated to open next door to East Burnside’s Jupiter Next Hotel.

According to Hall, their concept now has a chef—longtime ChefStable executive chef, Roscoe Roberson—and a ballpark opening date: early summer.

When we caught up with Hall last week, he dished on a few other details, too, including that the cocktail bar will be connected to an adjacent breakfast and lunch cafe that they’re calling Superette.

At present, Mistell is experimenting with the drinks menu and toying with guava-macadamia Mai Tais and rum and tamarind-ginger sarsaparillas, while crafting batches of tequila-pineapple Pimm’s Cups to put on draft.

Likewise Roberson is busy in the kitchen dialing in breakfast, lunch, and dinner dishes like shakshuka with padron peppers, “neon shrimp” (prawn with chiles and black vinegar), and “cloud eggs” (ham and milk bread with a cheesy egg yolk meringue).

Hall, who schedules Dig A Pony’s DJ sets, says there will be no live music at the space—why compete with the neighboring Doug Fir?—but that music will play a major component in the bar, covering all varieties of genres from the mid-1940s to the present day. In fact, he says it’ll sound a lot like what the bar’s Instagram feed looks like.

When it opens, Hey Love will open daily at 3 pm and close at 2:30 am, while Superette, located in the lobby of the hotel, will serve espresso, pastries, and low-ABV cocktails from 7 am to 10 pm.
