Kyle Hulings, the owner of the Garden Monsters food cart parked on Division and 50th, says he just picked up the keys for a new brick-and-mortar in part of the old Pono Foods space in the Hollywood neighborhood at 4110 NE Sandy on the Broadway side of the building.

This will be Hulingā€™s first foray into the brick-and-mortar game, and he says the plan is to use the space as a commissary kitchen for his fleet of cartsā€”heā€™s still looking for places to park two moreā€”and to provide made-to-order grab-and-go salads for locals and workers in the neighborhood.

In other words, there will be no indoor dining at the new space, but Hulings says heā€™s going to provide outdoor seating for eaters during the warmer months.

The idea for specializing in salads came to Hulings a little over five years ago after he was laid off from his marketing job at Yahoo. A serial home salad-maker, he wondered why there were no restaurants or carts dedicated to leafy greens (this was before Garden Bar or Crisp) and then wondered why he shouldnā€™t be the ambassador to do it?

So he bought a cart and opened for business on Alberta before settling into his current location in the Southeast.

Future guests, from vegans to carnivores, should expect the same kind of build-your-own and signature small and large ā€œminiā€ and ā€œmonsterā€ salads made with locally sourced plants, vegetables, and proteins and, if youā€™re an omnivore, fresh-from-the-griddle hot meats, all of which range in price from about $5.50 to $11 per salad.

Hulings says Garden Monsters' Hollywood location will open as early as April and will definitely be open by mid-May. When it does, itā€™ll keep the hours of 10 am to 8 pm, Monday to Friday, and once he finds his feet, those same hours on Saturdays and Sundays.
