After a weekend test run, Pop Bagel (the pretzel bagel joint courtesy of Nuvrei Bakery’s Marius Pop and Jessica Risdon) is now open for dine-in and take-out, seven days a week.

The new 14-seater has set up shop in the old GP Kitchen space after the Lake Oswego-based caterer and counter shop decided to wrap up operations last year.

When asked whether or not she and Pop are worried about pushback from purists about their pretzel dough bagels, Risdon wrote in a recent email, “Lol. We are tough. We can take it and are keenly aware of how polarizing the bagel debate can be. Boiled? Not Boiled? Who cares? Just eat them. They’re insanely delicious.”

The bagels come in flavors like everything, caraway asiago, cheddar jalapeño, vegan rye, cinnamon rum raisin, and orange anise, with schmears like rosemary-thyme, brown butter sage, kimchi, and blueberry-black pepper. Each bagel, Risdon adds, can also be turned into your choice of cheese or pepperoni pizza bagels.

Salads, a roster of sandwiches, and beet-cured lox round the menu out. The drinks program consists of a brand of drip made exclusively for Pop Bagel by Heart Roasters, as well as drinks like orange blossom iced tea, mint iced tea, and raspberry fruit punch.

Pop Bagel is open from 7 am to 4 pm, Monday through Saturday, and 8 am to 4 pm on Sundays.
