It’s probably fair to say that the people at St. Honoré Boulangerie know a thing or two about baking (they do, after all, produce some of the best pastries in town). Now they are sharing their knowledge by offering a couple of cooking classes this fall at their SE Division location—a timely way to obtain some baking skills in time for Thanksgiving (I mean, is there a better way to impress guests or a host than with a delicious tart where you can say you made the pastry?).

Guided by Emma Nowell, the boulangerie’s production manager and a patisserie and baking instructor at Le Cordon Bleu College of Culinary Arts, students in each class are taught how to make a tarte aux pommes fines (that’s an apple tart to you and me). Starting with how to make and handle dough, the class covers the different varieties of apple, including the best ones for cooking (Kiyokawa Family Orchards supply fresh apples for students to sample), and proper French baking techniques. As classes are small (each is limited to 12), personalized instruction is promised for each student, so there’s no excuse for not creating a tart that is ‘exceptionelle’.
