Do you like ramen and live in SE Portland? If you answered yes to both, good news: Boxer Ramen will open its newest Stumptown location sometime this spring or summer at 1613 SE Bybee.
Construction’s just getting underway, but the noodle spot’s co-owner, Matt Lynch, says that when it does open, Sellwooders (Sellwoodians?) will enjoy the same kinds of bowls, potstickers, beers, and sakes that folks in the SW, NW, and NE neighborhoods enjoy. (The SE spot will soon put the business in all four of Portland’s quadrants.)
And he adds that he’ll be introducing bento bowls to the mix, too, just in time for summer.
If all goes according to plan, the 32-seat space could open as soon as March. Stay tuned.
