WING WEEK IS BACK, and it’s bigger and better than ever!

From Mon June 25 to Sat June 30, the Portland Mercury’s Portland Wing Week promises an amazing array of 27 one-of-a-kind chicken wings—and not only can you get them at some of the best bars and restaurants all over town, but each order of wings will cost you a mere $5! Along with our Wing Week sponsors Jim Beam and Tsingtao Beer, the Mercury’s here to make sure that one thing in this world, at least, remains perfect and pure.

That thing is Wing Week, and it will be wondrous.

We’ve got a complete list of all the mouth-watering wings on the following pages—but before you start planning your routes to eat as many of these great wings as you can, a few things to keep in mind....

Alameda Brewhouse’s Spicy PB&J Wings

Heat Level: 3
The Wings: Fried and tossed in a spicy berry sauce, sprinkled with chopped peanuts, and served with a side of honey mustard.
The Sauce: Marionberry purée and our jalapeño concentrate sauce sprinkled with chopped peanuts. Sticky, sweet, and spicy, with a hint of a PB&J that brings back childhood memories.
What They Say: “These flavors go so well together. It really does taste like a PB&J—the only thing missing is Wonder Bread.”

Alto Bajo’s Carolina Reaper and Ancho Chili Wings

The Sauce: Carolina Reaper peppers, ancho chilis, brown sugar, and garlic.
What They Say: “These wings are a sweet heat. My inspiration comes from my love for hot peppers, smoked foods, and Mexican chilis. I believe wings should be hot but enjoyable to eat and should be paired with a good dipping sauce and an Oregon craft beer.”

Haymaker’s Smoke’Em If Ya Got’Em

Heat Level: 2
The Wings: Spicy dry-rub wings slow-smoked over hickory and char grilled. Served with a creamy and tangy Alabama white gold sauce and housemade pickles.
The Sauce: Alabama white gold is a wonderful regional sauce from Alabama meant to go hand-in-hand with smoked chicken. It is a mayonnaise and cider vinegar-based sauce, and we kick ours up with a little cayenne and a little brown sugar to bring it back down. We make this with another staple of the south, Dukes Mayo, that we special-order in. The bulk of the wings’ flavor comes from the hickory smoke and the dry rub of cayenne, garlic, onion, and brown sugar... as well as the char from being flame-grilled. The white gold sauce then cuts in with some nice acidity.
What They Say: “We are big on whiskey. We keep around 90-plus bottles in our tiny little bar, and everything food-wise is meant to go well with that. We first smoked wings when we had some room when doing a batch of pastrami, so we made some staff wings. The hickory flavor was great on the wings, so we kept playing until we found something that we wanted to bring to our guests. Everything on this dish brings me back to the cookouts we would have on base when in the Marines. It was a melting pot of cultures, but with a heavy hand from being in the South, and all done with makeshift smokers and pit dug fire pits to grill.”

The Wings: These delicious little morsels of love are first braised for hours, then fried for the ultimate fall-off-the-bone wing experience. They’re then tossed in our Asian-inspired bulgogi sauce and topped with sesame seeds and scallions.
The Sauce: Bulgogi sauce: A sweet, tangy, Korean-style sauce with notes of sesame seeds and a light heat finish. Ingredients: Sesame seed oil, soy sauce, brown sugar, sambal, ginger, garlic, and rice wine vinegar.
What They Say: “Chef Branden’s inspiration for these wings comes from his personal love for Korean cuisine. “We don’t have any flavors like this on our menu, and I would love to put out something different for our customers to try,” says Chef. “The subtle play between sweet, savory, and spicy will make for the perfect wing sauce.”

I still do it this way, and I had a feeling it would translate well onto wings! I reserve the jus from the carnitas process for the wing braise to bring it up a bit.”
