And like all of our wings at Dots, we brine them overnight in a brown sugar and saltwater mix with a little spice blend for flavor. Then we slowly confit them in bacon fat until they are tender enough to almost fall of the bone. After that, we smoke our wings with our hickory, cherry, oak, and maple wood blend. After a day when we tested dozens of different sauces from spicy to sweet, one of us said, ‘What if we just slathered these suckers (but pronounced with an ‘F’) with some nacho cheese!?
