Here’s one for the diary, especially for fans of Canada’s greatest gift to the world of gastronomy, poutine. For one week only the magical combination of fries, gravy and cheese curd will be on restaurant menus across the city. It’s the vision of Original Dinerant chef AJ Voytko as a way to raise funds for Providence Cancer Center.

Obviously it’s an excuse for the participating restaurants to go to town with the idea—Laurelhurst Market has a version with fries, mozzarella, peas, crispy pork shoulder and gravy. Radio Room has added chiles, crispy pig ear and a poached egg on top of theirs (a meal in itself?), and The Original is using red wine braised short rib. Potato Champion, Smokehouse 21 and Tabor Tavern are also riffing on the concept, while Hopworks Urban Brewery is doing a vegetarian option with wedge-cut fries.
