Doug Adams, executive chef at Imperial, is continuing his series of dinners with his fellow competitors from the last season of Top Chef. Tomorrow evening he is joined in the kitchen by Mei Lin, the show’s champion, for a special four-course dinner. Each chef will be preparing two courses—exactly what’s on the menu hasn’t been revealed, though Adams will be doing a version of his 24-hour short rib and Lin her renowned congee, a dish that helped her win the title. When Adams had Katsuji Tanabe, another Top Chef alumni, at Imperial for a Cinco de Mayo dinner, they turned out some impressive cooking in what was very much a party atmosphere—though presumably this time they aren’t going to have such stiff, tequila-based cocktails.
